No Mayonaisse Pasta Salad

This light and vibrant Pasta Salad is an excellent side dish!!

Ingredients

Dressing (make first)
  • 1 c sugar OR ½ c honey
  • 1 c white vinegar
  • 1/4 c vegetable oil
  • 2 T water
  • 1/2 t onion powder ( optional)
  • 2 T Italian seasoning
  • Salt and pepper to taste
Pasta Salad
  • 1 bag of pasta, your choice of shapes
  • 1 seeded and chopped cucumber
  • 3 - 4 ribs of celery chopped
  • 1 (4oz) jar of diced pimentoes, draining is optional
  • Any other veggies you like

Instructions

Dressing
  1. Mix and let dissolve before adding to pasta
Pasta Salad
  1. Boil pasta following package directions. Drain into a colander
  2. Add pasta and vegetables to a large bowl.
  3. Add the dressing over the top of the pasta/vegetables and stir to combine.
  4. Store covered in the fridge.

Notes

If packing for a day on the water or picnics, add the salad to a large resealable bag and place into an ice chest with ice or cooler blocks.
