Mother's Porcupine Meatballs

This recipe has been a staple in home kitchens since the early 1900's with good reason! It it delicious and the side dish is cooked in side the meatballs! To make it even easier you can use your favorite jared Spaghetti Sauce.

Ingredients

Meatballs
  • 1 lb ground beef
  • ½ c long grain rice, uncooked
  • ½ medium onion, chopped
  • 1 clove garlic, minced
  • 1 tsp salt
  • ½ tsp pepper
Sauce
  • 2 T butter
  • ½ med onion, diced
  • ½ c water
  • 1 (15 oz) can tomato sauce
  • 1 tsp Worcestershire sauce

Instructions

Meatballs
  1. In a large mixing bowl, add all ingredients (not the sauce ingredients) and mix until combined. Form into balls about the size of a tennis ball or smaller.
  2. STOVETOP/OVEN METHOD: Preheat the oven to 350F (176C). In a large ovenproof skillet, brown meatballs on all sides. Pour sauce over the top, cover with a lid and place in the oven. Cook for one hour or until the internal temperature of meatballs is 165F (77C) and the rice in the meatball is tender.
  3. PRESSURE COOKER METHOD: Into the removable pressure cooker pot, pour one cup of water and place grate inside. Place meatballs on the grate being careful not to go above the maximum fill line. Pour sauce on top of meatballs. Place the lid on the pressure cooker securely. Set the vent to CLOSED. Cook on high for 15 minutes. Naturally Release for 20 minutes. With a long handled utensil, CAREFULLY toggle vent to open. When ALL steam has completely stopped, carefully open the lid away from you.
Making the Sauce
  1. In a skillet over medium heat, add butter and saute onions until they are translucent. Add garlic and saute for 30 seconds. Add tomato sauce, water and Worcestershire sauce. Let simmer while prepping porcupine meatballs. Pour over meatballs before cooking.
