Mexican Street Corn Dip
This recipe came out of necessity! The restaurant that served it went out of business and after I recovered from the heartbreak I found this recipe that is an exact replica!
Ingredients
- 1 (8 oz) Cream Cheese, room temperature
- 1/2 c Feta Cheese or Goat Cheese, room temperature
- 1/2 c Sour Cream
- 1/4 c Mayonnaise
- 2 tsp Taco Seasoning
- 1 pinch Chipotle Seasoning
- 1 - 2 (15 oz) can Whole Kernel Corn, drained well
Instructions
- Preheat oven to 350F (176C)
- Pour drained corn onto a paper towel lined baking sheet to dry.
- In a mixing bowl add feta or goat cheese and crumble into very small pieces. Add cream cheese, sour cream, mayonnaise and spices. Stir to combine. Taste to adjust seasoning.
- Add dried corn to the bowl and stir to combine.
- Pour mixture into a baking dish and bake uncovered for 25 - 30 minutes or until bubbly.
- Serve with corn chips.
Notes
You can also add chopped green chilies and/or diced jalapenos.
