This recipe came out of necessity! The restaurant that served it went out of business and after I recovered from the heartbreak I found this recipe that is an exact replica!

Ingredients

  • 1 (8 oz) Cream Cheese, room temperature
  • 1/2 c Feta Cheese or Goat Cheese, room temperature
  • 1/2 c Sour Cream
  • 1/4 c Mayonnaise
  • 2 tsp Taco Seasoning
  • 1 pinch Chipotle Seasoning
  • 1 - 2 (15 oz) can Whole Kernel Corn, drained well

Instructions

  1. Preheat oven to 350F (176C)
  2. Pour drained corn onto a paper towel lined baking sheet to dry.
  3. In a mixing bowl add feta or goat cheese and crumble into very small pieces. Add cream cheese, sour cream, mayonnaise and spices. Stir to combine. Taste to adjust seasoning.
  4. Add dried corn to the bowl and stir to combine.
  5. Pour mixture into a baking dish and bake uncovered for 25 - 30 minutes or until bubbly.
  6. Serve with corn chips.

Notes

You can also add chopped green chilies and/or diced jalapenos.
